Ingredients

  • 2 Chicken Breasts
  • 1 Onion
  • Minced Garlic
  • Olive Oil
  • Spices: Onion Powder, Rosemary, Basil, Oregano, paprika, salt & pepper
  • 1 Red Pepper
  • 1 Head of Broccoli

Step by Step Instructions

Step 1

Dice your chicken and cut your onion into pieces. Add to a bowl. Toss with olive oil, minced garlic & spices. Let marinate in fridge for 4 hours, up to overnight.

Step 2

Preheat oven to 400 degrees. Heat a non-stick pan over medium-high heat, dump in chicken & onion mixture and cook for a couple minutes until browned. The chicken will still be raw in the center. Transfer to parchment lined baking sheet.

Step 3

Cut baby potatoes in half and toss into acti-fry until cooked. Should take about 15-20 minutes. Transfer to baking sheet with your chicken / onions when complete

Step 4

Add broccoli to baking sheet (could substitue for whatever vegetables you’d like). Place in oven for about 15 minutes until everything is roasted nicely and cooked through. 

Step 5

Top with a greek dressing or olive oil/balsamic vinegar mixture if desired, or serve with a greek salad & enjoy!
