After travelling in Greece in 2018, I became hooked on tzatziki. Here’s a recipe that is the next best thing to actually being there!
Ingredients
- 1/2 of a large cucumber, unpeeled
- 1 1/2 cups plain full-fat Greek yogurt
- 2 large garlic cloves, finely minced
- 2 tablespoons extra virgin olive oil
- 1 tablespoon white vinegar
- 1/2 teaspoon salt
- Dill (add as much as you’d like)
Step by Step Instructions
Step 1
Grate the cucumber and drain through a fine mesh strainer overnight in the fridge. Squeeze out as much liquid as you can
Step 2
Combine the yogurt, garlic, oil, dill, vinegar, and salt in a large bowl. Cover and refrigerate for a couple hours, overnight would be best.
Step 3
Transfer the grated cucumber to the yogurt mixture and stir to combine. Perfect on a pita, with fries, veggies or even chips!
