- Chicken Breasts
- Red Onion
- Minced Garlic
- Greek Spices (salt, pepper, oregano, basil, thyme, dill)
- Roasted Red Pepper Hummus
- Roasted Vegetables (Red Peppers, Onions)
- Pita (white store bought pita is fine)
- Feta Cheese (I used cracker barrell brand)
- Greek Dressing (Low Cal)
- Lemon Juice
- Tzatziki (here’s my recipe)
- Fries (I use mccain superfries)
Step by Step Instructions
Dice your chicken. Toss with olive oil, minced garlic & greek spices. Let marinate in fridge for 4 hours, up to overnight.
Cook chicken on medium-high heat in a pan. Roast Veggies in 400 degree oven (red pepper and onions).
Chop up cucumbers. Dice tomato. Slice red onions as thin as possible. Combine the three in a bowl.
Toss fries in acti fry until crisp. Top with salt, pepper and oregano.
Put pita in microwave with a mug of water beside it. Heat for 20-25 seconds until soft.
Take pita, top with tzatziki, hummus, chicken, roasted veggies, cucumber/tomato/red onions, greek dressing, lemon juice, more tzatziki and feta cheese. Put fries on the side and serve with side of tzatziki.
